This product is consistently available at our local Tops and Wegmans markets for about three bucks a box. I make either the Alfredo or the Parmesan flavor about once a week.  It is easy to prepare (20 minutes), it’s organic, satisfying, uses very few ingredients, and is versatile.  I add chicken or shrimp sometimes to make it a complete meal.  Even my gluten-loving spouse actually requests it sometimes.  One suggestion is to eat it immediately after cooking for best taste and eating leftover is not recommended.  Stock up and enjoy this delicious, easy side.</span></span></span></p>
<p><strong>Stove top Instructions</strong></p>
<p>Saute&#8217; rice with 1/2 tbsp. butter* in a 2-qt heavy saucepan over medium heat. Add 2 cups water, 1/2 cup milk, contents of seasoning pouch, stirring well to blend seasonings. Heat to boil. Reduce heat to simmer. Do not cover. Cook 20 minutes, stirring occasionally. Garnish with grated Parmesan cheese, parsley &amp; sliced shallots if desired. Serve piping hot.</p>
<p><strong>Microwave Instructions</strong></p>
<p>For Safety: Use microwaveable bowl, lid or plastic wrap. Microwaves vary; adjust time as needed.</p>
<p>Place 1/2 cup milk, 2 cups water,* 1/2 tbsp. butter,* rice and the seasonings into a 2-qt bowl. Mix well to blend seasonings. Cover. Cook 10 minutes on high. Uncover carefully and stir well. Cook uncovered for 10 additional minutes. If desired, garnish with grated Parmesan cheese, parsley &amp; sliced shallots. Serve piping hot.</p>
<p>Variations: * Use 1/2 tbsp margarine or olive oil in place of butter. Replace 1/2 cup water with 1/2 cup dry white wine if desired.</p>
<p><strong>Ingredients: </strong>Eco-FarmedT California Arborio rice, Parmesan and Cheddar cheese blend, salt, natural flavors, buttermilk powder, onion and garlic powder, cane juice powder, butter powder, whey powder, rice flour, dehydrated parsley, autolyzed yeast extract, black pepper, turmeric, expeller-pressed safflower oil (less than 2%; added as a processing aid).<br />

<p>I found this great flour substitute I wanted to share with others. <strong>Pamela&#8217;s Baking and Pancake Mix</strong>. Wow baking gluten free just keeps getting easier and easier!</p>
<p>I found this at Wegman&#8217;s in Buffalo, New York but you can also order the mix on line at  <span style="color:#0000ff;">http://www.pamelasproducts.com/Products_frames.html</span>. This is a good solid product as my rating indicates.</p>
<p>My goal this week was to make banana bread with some banana&#8217;s that I needed to use up.<strong> Pamela&#8217;s Baking and Pancake Mix</strong> really gave this bread a nice dense constancy. I can&#8217;t wait to try this mix again in other recipes. But for now here’s the recipe for a delicious, low fat, high fiber banana bread.</p>

<h2>Gluten Free Banana Bread</h2>
<p>1 3/4 cups<span style="color:#0000ff;"><a href="http://Pamela’s Baking and Pancake Mix" target="_self"> Pamela’s Products</a> </span>Gluten Free Baking Mix</p>
<p>2/3 cup sugar</p>
<p>1 teaspoon baking soda</p>
<p>Pinch of salt</p>
<p>1 organic egg, beaten</p>
<p>1/3 cup non-fat greek yogurt</p>
<p>3-4 ripe bananas, mashed</p>
<p>1 teaspoon vanilla extract</p>
<p>1/4 cup sunflower seeds</p>
<p>Mix together the dry ingredients.  In a separate bowl, whisk the egg and mix in the mashed banana, yogurt and vanilla extract.  Combine the wet and dry ingredients and stir until well blended.  Pour into a bread pan and sprinkle with sunflower seeds. Bake at 350 for 50-60 minutes, testing for doneness when the edges begin to spring back from the pan.</p>
